Quite complex for a $15 wine, one can find a wide range of flavors from bright berries and fresh flowers to black walnuts and motor oil. It also ages brilliantly. A 2005 consumed a couple years ago was beautiful. Certainly not the last word in fine Cabernet Franc, this wine is nonetheless one of our very favorites and we believe it is one of the world's best introductions to this overlooked grape.All grapes from limestone clay are vinified in conical wooden vats to maximise color and tannin extraction. Vinification lasts 20 days. There is both pigeage (punching down of the cap of grape skins) and pumping over. Malolactic fermentation takes place in large wooden casks, called ‘foudres’.These wines are intended for ageing, and spend 20-24 months in foudre before bottling. Very lightly filtered.
