France, ChampagneCote des Blancs"The offices for ChampagneVix-Baramay be in Épernay, but this is a new wine from Cécile Grongnet in the village of Étoges, and the single parcel used for this bottling also hails from Étoges. It is a new bottling made from a vineyard that first started towards organic conversion in 2015. TheVix-Baralabel is one used by Cécile’s family a couple of generations back and is being renewed for this new organically-certified bottling. This first release is from the base year of 2016, which was farmed organically, but the certification did not occur until 2019, so this is still not officially an “organic bottling”. A percentage of the vins clairs have been barrel-fermented and aged in cask for theVix-Baracuvée, with the wine having been finished with a dosage of eight grams per liter. The bouquet is young and quite refined in profile, offering up scents of lime, pear, chalky soil tones, crème patissière, dried flowers and gentle smokiness in the upper register. On the palate the wine is crisp, full-bodied, focused and nascently complex, with a good core, refined mousse and a long, poised and very elegant finish. This is a classic Grongnet bottling in its finesse and strong Côte des Blancs soil signature. It will be tasty out of the blocks, but even better with a few years’ worth of bottle age.
